Simple Chocolate Tart


Ingredients for 12 guests

12 inch flan tin
200g bourbon biscuit
125g melted butter
1 tbsp honey
315 ml double cream
A pinch of salt
115g Butter softened
455g 70% Dark Chocolate broken into pieces
Cocoa powder to dust

Method

Crush the bourbon biscuits either in a plastic bag with a rolling pin or in the blender. Mix the melted butter & honey into the crushed biscuits, and then cover the base of the flan tin & press down. Chill in fridge.

Place the double cream, pinch of salt in a pan and bring to the boil. As soon as the mixture has boiled, remove from heat, and add the chocolate & butter and stir until all melted. The mixture should be a nice smooth dark brown chocolate.

Pour chocolate mixture onto biscuit base. It will set within the hour in the fridge.

When cool & set dust with cocoa powder & serve.




Chocolate & Raspberry Tart


Place fresh raspberries on the biscuit base and cover with chocolate mixture.


Chocolate & Orange Tart


Grate the zest of one orange into the chocolate mixture. Drizzle the juice of half of the orange on the
base. Pour chocolate mixture on to base.
